I would like to know how to cook steak on the stove or in the oven, since I don't have a barbeque in my apartment.
1) What cut of meat should I get?
2) What kind of pan do I need?

I made a couple of really good steaks under the broiler in my oven earlier today. I just used some flank steak. I salted and peppered it and placed it on my broiler pan. Then I broiled it for about 6 minutes turned it over for a minute and it was all done. Yummy.
Oh be sure to pre-heat your broiler for a minute so it is nice and hot before putting in the steak.
Ask your butcher.
Get a rib eye, bring it to room temperature. Season it up with some pepper.
Heat a cast iron skillet, add a touch of oil to coat the bottom. Lay in the steak. Cook for about five minutes. Turn, and cook for about 3 more minutes. Check to see if it is how you want it. Cook longer if not.
Serve with barbecue beans, green salad, and warm bread. Bon appetite!
how much do you have to spend? A flank or skirt steak is inexpensive and very flavourfull marinate it in a plastic freezer bag for abt an hour w/ minced garlic and olive oil and 1/2 c. red wine maybe some finely minced fresh ginger…put in hot pan w/ a small amt of olive oil and (turn on fan) 4-5 min turn over 4 same time let it rest covered w/ foil 10 min serve w/ potato and salad? or whatever…I like a black heavy cast Iron skillet but any pan can be used…It isn’t that different for other cuts of steak fillet mignon and rib eye are thought to be flavorful and are more expensive…experiment and have fun
get a think new york strip
use a non-stick skillet
season the steak with the seasons that you like (i use garlic, season all, and grill season)
melt 1 tbsp butter in the skillet
fry the steak (no batter/flour) for about 5 minutes on each side or until it’s the color on the inside that you like…
i add onions and peppers..it’s really good
I only know one way how to do this, but it’s easy. Buy a thick steak, at least 1/2 an inch thick. T-bones and Ribeyes work very well.
Use a heavy frying pan, preferably a cast iron one if you have, but nonstick is ok too. Heat up the pan very, very hot. You don’t put any oil in it.
Rub the steak on both sides with a spice rub of your choice. Paul Prudhome (sp?) makes a spicy cajun steak rub that I love. You can get it at the grocery store. Or you can make your own. There are some good recipes in the book The Joy of Cooking.
Then you just place the steak in the pan. Cook it for 2-3 minutes on each side for medium rare, or longer if you like it cooked through more. It also depends on the thickness of the steak. You have to use your judgement.
It creates a lot of smoke, so keep the windows open and the fan on. But it’s a quick and yummy way to cook steak without a grill. I believe the technical name for this method is pan grilling.
Use a non stick pan. The cut of meat depends on how you like it. Go to a old style butcher they can help. Most places still have them.Look it up in the phone book.
Marinate steak in olive oil & chopped basil for 1/2 – 1 hr., fry in heavy skillet on high heat to sear in juices, season w/ rock salt & pepper to taste, turn only once, either lower heat or finish in oven. Minced garlic can be added at any point. Serve w/ steamed Asparagus & Garlic French Bread & Green Salad. Caesar or Balsamic Vinegar dressing w/ grated Romano on top. Bon Apetit! Nice Cabernet Sauvignon. You can use anything from top sirloin, New York, Or Porterhouse. Cast iorn skillet the best or any heavy skillet to hold even heat. ( I think I know what I’m making for dinner tonite, I’m using Top Sirloin ’cause I can’t afford Porterhouse, even cross rib steak is excellent!) Sliced. sauteed or steamed carrots r a good vegie w/ butter. Or Cauliflower onions, broc steamed w/ melted jack or swiss cheese.
