Have never heard of cleaning chicken with lemon salt and vinegar.. Your mom must know something I don't. I always just rinsed the chicken under cold water and patted dry. But if this has always worked for her.. then follow Mom's advice.

That is correct. Lemon/lime salt and vinegar will do the trick. Another suggestion, when it comes to BBQ you should boil the chicken in seasoned water (salt, a little vinegar, and garlic) until they turn a pale color take them out put you spices and throw them on the grill. It wont take as long on the grill to cook as completely raw chicken would.

Yes.. cleaning chicken with lemon or vinegar will help wash away bacteria, and also get rid of that chicken smell. It neutralizes the blood somehow. You can do it that way for every meat you use, and is a good practice to wash meat before eating it.
I soak in salt water about 20 minutes after I wash the chicken. It seems to make it more tender, and helps to season it a bit. Something my grandmother did, so now I do it....But I'm not sure the reason for it other that that.

Vinegar, lemon and water can't hurt, unless you leave it on too long. The vinegar might change the taste a little and it might tenderize the meat. Vinegar and lemon can act as a marinade under certain conditions. Personally, I just use water, paying a lot of attention to removing the occassional feathers and feather holders (I don't know what else to call them). But, they are sometimes left after the feather has been removed. I don't like to find them in the finished product, nor serve them to my guests.
