		<description>Get an electric smoker, soak apple and hickory in water for a day or two, about 3 cupfulls, which goes on plate in bottom over coils.
Put shoulder, picnic, brisket etc on top, close down lid and let her go, about 20 minutes per pound on high, will make your tongue slap your brains out when done.</description>

		<description>Not going to happen my friend even with them burning out the BBQ itself will add a smokey flavour to the meat, fish or poultry, smoking chips, sawdust or with the larger BBQ wood logs, that is the reason for using them, I am a former chef, and why waste the time to burn them if your not interested in the flavour, if you do do that, wrap the salmon in a foil package and cook it that way to eliminate any traces of smoke.</description>

Soak chips (just a couple of hours will do fine). Place onto an aluminum foil rectangle (shiny side IN). Fold to completely close up. Place foil right on the stones, or as close to heat as you can. Close cover. Let &quot;cook&quot; for 15 minutes, or until the chips are definitely &quot;cooking&quot;.
Take foil off the heat source. Put your food on the cooking grate; place foil with chips right beside it and open at the top. Cook the food with the chips, grill lid closed. The steam will come off of the chips and flavor the food. At some point, the foil may burn through, but that&#039;s not a problem. Just don&#039;t get the chips or foil right in the food.
