I am trying to find a recipe to make beef (or whatever kind of meat) in our gas bbq grill outside. I need to make jerky for a kids class on pioneers so the recipe needs to be the kinds of spices they would have had on a covered wagon.

Jerky used by the pioneers was simply meat “pulled” from the muscle rather than cut, then soaked in brine (saturated salt water) and sun dried by hanging the strips over a clothes line or wire.

the pioneers were required to present the receipts for a years supplies of staple items before joining any wagon train
as for the Chuck Wagon, I am sure the every day spices were used even the ones for turkey and pumpkin pie.
how long is 20 miles a day for 3000 miles close to 6 months
and jerky was more likely an item that was made in the towns Rather than in the field It takes days to dry the meat
and they have a time schedual
But i guess a clever cook could keep the flys off the hanging raw meat within the covered chuck wagon.
